Intermodal! This 100% spontaneously inoculated wild beer was created in a style inspired by traditional lambic producers.
Never heard of Lambic beers? They're funky, bright, vinous brews that originated in Belgium in the 13th century.
During a window of specific overnight temps in the fall each year, we take traditional turbid wort, let it rest over many nights in the open-air coolship, and allow the finest wild yeast and microorganisms to join in on the slumber party.
Our 2024 batch was divided into two light, tart, funky, extra bubbly versions ― a classic spontaneous sipper and one with the addition of Cab Franc grapes.

伝統的なランビックに影響を受け醸造されたワイルドエール。2021年版は2020年、2019年、そして2018年から熟成されているものをブレンド。伝統的な製法で造られたウォートをクールシップに流し込み、野生酵母を採取。今回は若い熟成年数のものに比重を置いてブレンドされている。ブレンド後にボトルコンディションを経てリリース。白ブドウの様なタンニックな味わいに、野生酵母で造られたサイダーを想わせるリンゴの風味、そしてシナモンやカルダモン、ジンジャーとアップルパイの様なスパイシーさも感じられる。ブルワリーのビールに対する英知と想いとが詰まった一本。
