In July 2020, "Terf" saw its first release. This local wheat beer was brewed by Brasserie de la Senne in Brussels using old wheat varieties from the grain network of Brewery 3 Fonteinen in Beersel, Brabant. Another portion of the brew matured for three years in oak lambic barrels. In November 2023, this "matured" Terf will be ignited with young 3 Fonteinen lambic, in a 55/45 ratio. This Wilde Terf is the fruit of collaboration between brewers and farmers around Pajottenland varieties and a fair income for the farmers. Above all, it is an ode to the historical agricultural ties between Brabant and Brussels.
