2024年にパシフィックノースウエストでのホップ収穫の旅で自ら選定したシムコ―とモザイクホップの香りの素晴らしさに感動して誕生した、非常にモダンな構成のウェストコーストIPA。ダンクな樹脂感にシトラスの鮮やかさ。すっきりとキレのあるボディ。名前は醸造所の兄弟猫から。

New from Jester King is The Garys’ West Coast-Style IPA, named in honor of our beloved brewery cats Gary and Gary. The Garys are brothers, and how they came to share the same name is not entirely known. The Garys are a fixture around here at Jester King, having been here for years. They tend not to wander too far from the brewery. Look for them hanging out on the brewery patio next time you’re here, and feel free to pet them. They’re friendly little guys.

The Garys’ West Coast-style IPA was inspired by our trip to the 2024 hop harvest in the Pacific Northwest. We were blown away by the quality and aromatics of the Simcoe and Mosaic we got to hand-select, and we came home inspired to make a beer featuring these hops. The Garys’ is very modern in its construction with a sleek, crisp, minimalistic malt bill (just Pilsner malt with a toach of Carafoam). From there, we hopped the beer aggressively both on the hot side and in the dry hop. The boil is all Simcoe, and we loaded up the whirlpool with Simcoe and Mosaic. In the dry hop, we added more Simcoe and Mosaic, along with Columbus Cryo and some Citra Cryo, to add a bright, juicy note to the piney dankness. Finally, we added some Simcoe and Citra Hyperboost cold side for good measure.

We hope you enjoy The Garys’! It’s crisp, dry, and crushable but delivers an abundance of piney, dank, juicy hop flavor and aroma, which we feel does justice to the awesome hops we got to select last fall in the Yakima Valley! It’s available at Jester King seven days a week and is self-distributed to Austin, San Antonio, Houston, Dallas, and Fort Worth!
